Toor dal is the number one lentil used in India and must not be confused with yellow lentils. Toovar dal exhibits a thick gelatinous, meaty consistency. They take a little longer to cook than moong or masoor dal. This slightly sweet, nutty flavored lentil is easily digestible and takes on the flavors of spices easily. We suggest a pressure cooker for a creamy consistency and quick cooking of any lentils and beans. Yellow split peas can be made into a puree for serving with vegetables.

This lentil is used for: 1. The South Indian delicacy, sambhar 2. Yellow split peas can be made into dal soups and stews which is served with side dish of vegetables, rice or flat breads. Cook for about 20 minutes with ginger, veggies like carrot, beans, potatoes and season with Ajika dal spices. Serve with a side of yogurt, chutney, bread, rice.

Season this lentil with Ajika dal Spices fried in ghee and poured over the cooked dal. Season the dal with jaggery, lime juice and cilantro.

•Iron, phosphorus, folate and plenty of other good stuff

Lentils and split peas are low in fat and high in protein and fiber, and they have the added advantage of cooking quickly without the need for soaking. So, while you can buy canned lentils, they are so easy to cook from dried that I really encourage you to give our lentils a try. This is how easy they are to make - Boil 1 cup washed and drained lentils with 4 cups of water a inch piece of ginger and salt. Simmer until tender on reduced heat for about 25 minutes. You can cook them in 10 minutes in a pressure cooker. Fry seasonings with onions and tomatoes and add to the lentils.

You can make lentils into soup, savory porridges or into stews and even spreads.
