A long-grain rice from Thailand that is actually a form of sticky rice, but because the black bran layers are not removed from the rice during processing, the rice does not stick together when cooked. Thai black rice has a sweet nutty flavor and like some other varieties of black rice, it develops a purple color when cooked. In Thailand, it is usually not eaten as part of the main meal, but is instead sweetened with sugar and coconut milk and used as a dessert or snack. It is very filling, so it is usually eaten in small quantities. You'll be amazed at the unique taste of the rice in combination with the coconut milk. Add a dab of coconut cream on top (instead of whipped cream), and you have a healthy dessert that's very delicious

• Long-grain rice produces light, fluffy rice and is many times more aromatic. Examples include basmati rice, jasmine rice.
• Short-grain rice, typically found in East Asian cooking, results in rice that is sticky.
• Medium-grain rice is shorter than long-grain and less sticky than short-grain. This is usually used for making paella, Egyptian rice.
• Black & Red rice is used for desserts and is perfect with coconut and sweet fruits like banana and pineapple.
Perfectly Cooked Rice
Use a 2-to-1 water-to-rice ratio, although brown rice tends to require a little bit more water than white. Also, using less water and a dollop of ghee or butter will produce rice that's more firm and less sticky.

Ingredients
1 cup black rice (sweet)
1/2 teaspoon salt
1/2 cup sugar
3 1/2 cups cold water
1 cup coconut milk
Directions
Place rice in a bowl and rinse with water by stirring in a counter clockwise motion.
Do this repeatedly until the water is clear and clean, indicating the rice is clean.
Pick out any odd grains.
In a medium saucepan, stir rice, salt, sugar and water and bring to a boil.
Stir well and reduce heat to low.
Cover and simmer gently for 1 1/2 hours to 2 hours until all of the water has been absorbed and the rice is tender.
Stir in the coconut milk and serve immediately as a hot dish.
Or chill and serve cold.
