Poha or flattened rice flakes is made out of rice which is husked, cleaned and soaked in hot water. It is then pressed under rollers & dried. These off-white, paper thin flakes are very light and bland in taste. It can be roasted, fried and made into sweet and savory dishes. An excellent ingredient for a contemporary American kitchen. Poha is an instant rice that is popular in Indian quick meals for breakfasts and snacks. Just wash and steam. The traditional recipe is given below. Chivda - Poha or Rice Crispy Savory Party Mix - perfect for munching on, picnics, childrens snack to school, cocktailsbr /Cooking Time : 6 mins, preparation Time : 10 mins, makes 3½ cups. br /Ingredients: br /3 cups thin poha br /1 teaspoon mustard seeds (rai) br /1 to 2 fresh green chillies, finely chopped br /4 to 6 curry leaves (optional)br /1 tablespoon unsalted peanuts br /¼ teaspoon turmeric powder (haldi) br /1 teaspoon powdered sugar br /a pinch citric acid crystals - if you do not want to store it for a long time - lime juice may be used instead of citric acid and a garnish of fresh cilanto makes this a stunning snack to impress your friends at your next partybr /1 tablespoon oil br /salt to tastebr /Keep all above ingredients separately ready to go - maybe along the rim of a platebr /Method :br /1. In a wok, heat oil, add and mustard seeds till they sizzle and splutter. Quickly add green chillies, curry leaves, unsalted peanuts, turmeric powder and saute for 1 minute. Reduce heat to medium and add the poha and roast the mix while stirring and blending and folding in the mix for about 2-3 more minuites or till the poha is roasted through. br /3. Add the sugar, citric acid and salt and mix well.
