Chicken Madras Simmer Spice Mix, Parampara

Stovetop method:

Mix the entire contents of this packet with 21/4 cups (350ml) of water in a cooking pan. Add 300 to 400g of chicken pieces. Simmer on a medium heat for about 20-minutes until the chicken is tender and the sauce becomes thick.

Microwave method:

Take 300 to 400g of chicken, entire contents of this packet and 21/4 cups (350ml) of water in a microwave friendly bowl. Mix it well. Cover and cook for 18-minutes or 14-minutes.

Suggestion: In the above recipe, half a cup of water can be replace by the same quantity of thick coconut milk for a more authentic taste.
