Recipe to make the Chole.
1 packet of Parampara Chole Gravy Mix
1 can of chickpeas (or 1/2 cup chickpeas or garbanzos from our store, soaked for 4 hours, and boiled for 1/2 hour). Drain the garbanzos
2 cups of water
1 small tomato and onion diced (optional)
Minced cilantro to garnish the dish (optional)
Add the drained, boiled chickpeas into a pot and add the packet-mix and water - and
bring to boil. Reduce the heat so that it simmers - and keep it simmering with the lid off
for around one hour. Stir occasionally.
Simmer until the "gravy" has reduced so that the chickpeas are visible in a
semi-thick consistency.
Add tomato and chopped onion. Let the dish simmer on low for a few more
minutes.
Accompaniment to Chole or Channa Masala
Cucumber & Onion Yogurt side dish or Raita

1 cup cucumber, diced in small cubes
1 cup onion, thinly sliced
1 1/2 cup natural/plain yogurt
1 1/2 tbs. fresh mint or cilanto, finely chopped
1 green chili, finely chopped (optional)
salt
freshly ground black pepper
1/2 tsp. sugar
