Fennel is mainly grown in Egypt and India. Fennel has an anise-like flavor but is more aromatic, sweeter and less pungent.  Fennel, a tall perennial herb, is native to southern Europe and the Mediterranean area. The name comes from the Greek word for "marathon" because the famous battle at Marathon (490 BC) against the Persians was fought on a field of Fennel. Fennel Seed added to meatballs or meat loaf gives an authentic Italian flavor.   Fennel sometimes form part of garam masala powder. It is not essential to fry fennel powder as it is very aromatic. Used widely in the cuisine of Bulgaria, Romania, Hungary, Greece, Turkey, Italy, France, Germany, Egypt, India, and China
How to use:
  • Add fennel to fish and to vegetables
  • Add to Indian and Middle Estern curry like dishes. Essential ingredient in Kashmiri Roganjosh.
  • Add fennel seeds to any tomato or cream based pasta sauce
  • Add fennel seeds to bread dough or even sweet baked goods
  • Add fennel leaves or seeds to stir-fry or curries
  • Add to a vegetable dish, sautéed with onions or garlic drizzled in olive oil and lemon and seasoned with salt and pepper
  • Add seeds to Italian sausages poultry or seafood marinade

Hint: Toasting Fennel Seeds accentuates their flavor.
Saute Fennel Seed with sliced peppers and onion to garnish meats.
Botanical Name: Foeniculum vulgare
Geographical Sources - India and Egypt
Traditional Ayurvedic(herb) use:  Alleviates Kapha & Vata, but also considered tridoshic. Does not necessarily aggravate Pitta.
Action on Agni: Pachana ­good in low Agni conditions. Useful in intestinal worms.
