Cumin Seeds/Jeera: It is one the most widely used spice in Indian cooking. Mexican
cooking and MiddleEastern cooking also use it often. It is also a very important element
in Indian and ayurvedic cooking and has been used for millennia. North Indian curries and
dry vegetables are mostly flavored with whole cumin seeds. Cumin is considered to
have digestive properties and is also considered to have cooling properties.
Here are a few suggestions how to use organic cumin in cooking:
· The cumin/jeera seed is almost
always exposed to heat to release its wonderful aroma and flavor.
· It is also used as a garnishing spice
when it is dry roasted and coarsely ground and then sprinkled on yogurt salads/raita,
Indian salads or kuchumbers
· Most of the Indian lentils and beans
will have cumin added to them. It imparts flavor and helps to digest beans and
lentils
· Heat Cumin and garlic in oil or ghee
and add vegetables and potato, alternatively drizzle over cooked vegetables or potatoes
· Add ground Cumin tangy lime or lemon
or yogurt marinades for grilling and barbeques
· Cumin is frequently used in many
Mexican dishes including chili con carne and tamales

considered tridoshic. It is restorative to all tissues
Cumin seed is used for diarrhea and indigestion. Specific for headaches caused by
ingestion. Hot cumin water is excellent for colds and fevers and is made by boiling a
teaspoon of roasted seeds in 3 cups of water. Honey can be added to soothe a sore throat.
It is supposed to increase lactation and reduce nausea in pregnancy. Smoked in a pipe with ghee, it is
taken to relieve the hiccups. Stimulates the appetite.
