This has always been a highly valued spice.  Its origins are in India’s Malabar coast.  It is an important part of today’s gourmet pantry.  It is as versatile and loved as saffron and vanilla and can be added to both savory and sweet dishes.  It is used in beverages and in desserts. The Arab traders introduced cardamom from India to the markets in Copenhagen and Europe.  Many traditional sweets in Europe now are flavored with this spice. The seeds, which posses most of the sweet, highly-perfumed citrus fragrance, should at their best be black and sticky with essential oil. Cardamom is an expensive spice, second only to saffron. It is often adulterated and there are many inferior substitutes from cardamom-related plants, such as Siam cardamom, Nepal cardamom, winged Java cardamom, and bastard cardamom. However, it is only Elettaria cardamomum which is the true cardamom. Indian cardamom is known in two main varieties: Malabar cardamom and Mysore cardamom.
 Here are a few suggestions how to use organic cardamom in cooking:
·          Remove seeds from pods and coarsely crush them.  We recommend this to powdered cardamom due to the ease in loss of its essential oils and fragrance and because the true cardamom is an expensive spice.
·          Add to virtually any sweet instead of vanilla bean flavor
·          Use in pilafs for taste and heavenly aroma
·          Use in Indian curries
·          Use it in cookies, gingerbread and yeast dough
In Scandinavian countries it is commonly added to breads, Christmas stollen, cakes, cookies, muffins and buns
·          Crush the seeds and add to black tea with milk to make Indian elaichi chai
·          Arabic countries use it to flavor and perfume their coffee.  Add to ground coffee before brewing
Hint: A very pleasing and important spice to have in the pantry.   Try to surprise guests with whole cardamoms in the dish.
Storage: Stored in a glass jar, cardamom pods will stay fresh indefinitely.
