Shrimp Curry (SERVES 4)
Ingredients:
HINT: You may also try our shrimp Masala/spices to create a shrimp curry
3 tbsp - Vegetable oil
2 to 3 Onion (finely chopped)
1 tbsp. Black Mustard seeds
6 curry leaves
2 tsp. Ginger paste
2 tsp Garlic paste
3 tsp Vinegar
2 tbsp White rum (optional)
2 tbsp Coriander Powder
1 tsp. Turmeric powder
1 tsp Cayenne pepper
1 tsp Garam masala
1 tsp Sugar
1/2 cup Tomato peeled and diced
1/4 cup Coconut milk
1 lb Shrimps
Salt to taste
a few Green pepper julienne
1/4 cup chopped green coriander
Heat oil in a heavy bottom saucepan. Add mustard seeds and curry leaves.
Stir fry for a minute and add onion. Sauté onion for 5-7 minutes.
Add garlic, ginger, vinegar, white rum and fry for 3 minutes.
Stir in coriander powder, turmeric powder, cayenne pepper and garam masala. Fry for
1 minute. Fold in tomato, sugar and coconut milk, bring it to a boil and stir in the
shrimps. Add salt, green pepper strips and chopped coriander leaves, simmer covered for
few minutes.
Serve hot with Goan Red rice.
