Dukkah, Dokka or Dükkah is a delicious Egyptian sesame seed and spice mixture. Its texture works well as a topping for salads or yogurt and also adds a nice dimension of flavor to pie crusts or steamed vegetables. Hints of cumin and coriander within the mixture lend a nice touch to pan fried fish and mutton stews. Additional uses for dukkah include mixing it with sour cream or yogurt to create a dip, incorporating it into bread dough or sprinkle over the top of a loaf before baking and adding texture and flavour to a sandwich filling ( it is suprisingly good with butter and golden syrup or honey). Traditionally, Dukkah is eaten by dipping fresh Egyptian baladi bread first into olive oil and then into the spice mixture.
