Ajika Bulger Cracked Wheat or Dalia Split

Dalia is chana dal,roasted and split. It is commonly used as a thickener to prepare chutneys such as coriander chutney.

Cracked Wheat Pilaf1/2 cup dalia (broken wheat ) dry roast the dalia ( broken wheat ) in a panbr /1 onion small and finely choppedbr /1 tomato finely chopped br /2 cups mixed vegetables finely chooped ( carrrots, cabbage, spinach, peas, beans, bottle gourd )br /2 tsp. gheebr /salt to tastebr /1/4 teaspoon black pepper powderbr /2 cups waterbr /1/2 teaspoon cumin seedsbr /1 table spoon cilantro/corriander leaves finely chopped class=body Heat just ghee in a pressure cooker. Add cumin seeds and when they crackle add chopped onions, when they start looking transparent add chopped tomatoes. Saute for just 3 to 4 min. Add all the finely chopped mix vegetables, saute the vegetables for about 5 min and add salt.br /Add the dry roasted dalia ( broken wheat ) and water to all the vegetables in the pressure cooker.br /Add pepper. Mix well.br /Close the lid of the pressure cooker and cook under pressure. Wait till the pressure cooker opens. br /Garnish with chopped cilantro class=body Lapshi, a halwa-porridge made with jaggery and coconut milk/plain milk, is popular in Maharashtra, Gujarat and Rajasthan, usually during festivals. class=body LAPSHI (Broken wheat porridge)-makes 4 servings class=body 1 cup broken wheat/daliabr /3/4 cup sugar (or jaggery)br /2 1/2 to 3 cups milk (boiled)br /5-6 tablespoons gheebr /1/2 teaspoon cardamom powderbr /8-10 cashews class=body 1.Heat a teaspoon of ghee in a sauce pan. Lightly toast cashew pieces and keep aside. Add remaining ghee. Roast dalia on low heat till it is aromatic.br /2. Heat the milk in another pan. Add to roasted wheat and cook till dalia becomes soft ,on medium gas flame.br /3.Next add sugar, stir gently and cook further till it dissolves and ghee separates from the mixture. br /4.Be careful as the wheat bubbles heavily. Lapshi thickens after cooling so don&#t cook till it is very dry,leave it at semiliquid/thick wet porridge consistency. Sprinkle cardamom powder, garnish with cashews and chironji and serve hot.
