Aash-e joo Recipe
For 4 servings
300 g Chicken, preferably drum sticks (11 oz)
150 g Pearl barley (5 oz)
1 Onion, medium size, diced
2 Carrots, medium size, diced
7 g Parsley flakes , dried (1/4 oz)
5 ml Salt (1 tsp)
0.6 ml Turmeric (1/8 tsp)
0.6 ml Pepper (1/8 tsp), Optional
2 Lemon or lime, optional
1. In a saucepan, add chicken, onions, pearl barley, salt, turmeric, pepper (optional) and one liter of water (4 cups), bring to a boil, reduce heat and simmer for 1 hour
2. Add carrots and parsley flakes , simmer for another 20 minutes, stir occasionally and serve. OPTIONAL Cut a lemon or lime in half and serve it along with your soup.
