There is an art to using seasonal spices. Our part of the earth has a golden hue now, the barks start showing, the days grow shorter, the air is cool and our being wants the smells tastes of warmth. When it comes to spices genius Mother Nature has a treasure trove. Sweet, warming spices lend themselves perfectly to meats - chicken, venison, pork, turkey and all of fall vegetables. These spices mirror our enviroment in colors and looks but the genius is that they warm us and their aroma fills the home and our senses to ground us for the winter season.
Winter spices include, cardamom, cinnamon, cloves, black pepper, black cardamom, saffron, mace, nutmeg, ginger and bay leaves.
We have a wonderful spices sugar that makes wonderful warm drinks, and may be added to mousse or chocolate. This blend is flavored with saffron and cardamom and almonds.
