Welcome the warmer weather with fresh tender veggies!
The farmers market in Spring is full of fresh peas, asparagus, leafy greens, leeks, artichokes, radish, chicory, rubarb, spinach, kale, collards and herbs.
Veggies are quick to prepare with our Ajika Vegetable Spice blend (Saute 1 tsp. of spice blend in 2 tbsp. ghee and then add 1 lb. cut veggies, 1/4 cup of water and salt and steam. Add a dollop of yogurt or fresh lime juice to complement the spices).
Spring is the time for rejuvenation. Our digestive powers suffer in winter and need to be rekindled. Easy digestable foods are important in this season as the digestive fires are restored. The Ayurvedic health system recommendes that vegetables be steamed till they are butter soft so they are digested easily. Pair vegetables with wonderful dals/lentils from our store along with a side of raita or yogurt salad.
Besides being easy to make veggies are rich in fiber, iron, and vitamins A, B2 and C. Leafy greens are rich in folate and health protective phytochemicals such as lutein and zeaxanthin.
