Like the world over, potatoes are a favourite Indian vegetable. There are hundreds of recipes, but this is undoubtedly my favourite.
Ingredients
1 ½ lbs potatoes, peeled and quartered
2 tbsp. Patak's Mild Curry Paste
1-2 tbsp. vegetable oil
1 medium onion, sliced
Method
Par boil the potatoes in salted water for 5-7 minutes. Drain. In a small bowl, mix together Patak's Mild Curry Paste and the vegetable oil. Combine the potatoes and onions and coat with the the curry mixture. Bake in a pre-heated oven for 30-45 minutes at 375 degrees F.
Serves 6.
