February is the time to delicately season foods. It is a good time to go light and healthy to clean out the remaining winter effects.
Our favorite here is sprouted foods. February vegetables steamed with our subzi spices is a great way to eat seasonally. Alternately, season foods with toasted sesame seeds, shredded coconut, ginger and jaggery. Try fish with ajwain, ginger and turmeric. Lentils and Indian chutneys and pickles are excellent this season.
What's in season?
Vegetables: artichokes (Jerusalem), brussels sprouts, brussels tops, cabbages (white and various green varieties), chicory, endive, greens (spring and winter), kale (and borecole), leeks, lettuce (greenhouse), onions, potatoes, carrots, cauliflower, potato, onions.
Fruit: rhubarb (forced)
Fish and shellfish: cockles, cod, crab (brown, cock and hen), oyster (rock)
