Create classic flavors in your home. Here is the techinque in summary. - A "curry" sauce is just
(1) onion, garlic, ginger and chiles that have been chopped and fried
(2) Mix in your choice of AJIKA spice blend (chicken, meat, roganjosh, vindaloo, tikka, biryani) and then
(3) add plump crushed tomatoes. Simmer this concoction till the tomato dries up releasing the oil. Add chicken, paneer, spinach, lamb, goat and water to make typical curries.
(4 - optional) Add coconut milk or a few tbsp. of pureed nuts or sour cream, yogurt, heavy cream to make rich curries served in restaurants.
