Spices have long been used in India to balance the effects of the season. Summer is the Pitta season in India. Pitta is the element of fire and it is soothed and balanced in the presence of water. Use fresh local, organic veggies along with the spices below. Here are the Spices that are perfect for spring:
- turmeric - an anti-inflammatory, helps detoxify the liver, balance cholesterol levels, fight allergies, stimulate digestion, boost immunity and enhance the complexion.- coriander - a cooling herb spice
- fennel - a cooling herb spice
- cardamom - a cooling herb spice
- mustard seeds - helps in digesting foods
- panchporan - helps in digesting foods
- mint and basil - a cooling herb

Kicharee is an easily digestible rice lentil dish with the protein of mung dal and along with the cooling spices and herbs it makes a good balanced summer pilaf.
