About the Product :

Whole moong bean is known as 'sabat moong' . They are small yellowish green beans fairly used in India, China, Thailand and Japan. Sprouted they are used in salads or stir fries with lemon juice or vinaigrette. In India, Moong dal is used to make delicious dals and curries. Moong lentils in particular is very easy to digest and take on seasonings and spices very well. Dal is a very comforting food just like chicken soup. In Malaysia a sweet porridge served warm has mung beans as its base, then palm sugar and coconut milk are added. In Sri Lanka, mung beans are mixed with palm sugar to make 'mung kavum'. In modern times we may use this as a spread on toast for a healthy snack.

 All natural. Friend of the heart. Diets rich in whole grain foods and other plant foods low in total fat, saturated fat and cholesterol, may reduce the risk of heart disease and some cancers. Mung beans are easily digested, containing few oligosaccharides which cause flatulence making them a good choice for children, older adults and when one is not feeling very well as digestive systems are delicate at these times. They contain between 19-25% protein, 60%carbs and 4% fibre. They are also contain lysine, potassium, calcium, magnesium, iron and traces of thiamin, riboflavin and niacin.

Recipe :

Moong Dal Spinach Ingredients: Serves 6
1 cup yellow moong dal, washed
1 bunch fresh spinach cleaned, stems removed and chopped fine
½ tsp. turmeric
1/4 tsp. clove-cinnamon powder. (you may also use them whole)
salt to taste
Seasonings
2 tbsp. ghee
1/2 tsp. cumin seeds
½ tsp. mustard seeds
1 tsp. ginger grated
1/2 tsp. garlic grated
1 to 4 green chilies, chopped
Fresh seasonings
1/2 tbsp. lemon or lime juice
Preparation -
Add the dal in a pot with a tight lid. Add 3 to 4 cups of water, cinnamon-clove powder and turmeric. . Bring to a full boil, lower heat to medium low and add the salt. Cover and cook until dal is soft and cooked. Adjust water so the dal does not stick to the bottom of the pan. The beans should be whole and not mashed. Remove from fire and set aside.
- Heat 1 1/2 tbsp. ghee in a small skillet. Add cumin and mustard seeds and they will splutter. Quickly add garlic, ginger, green chili and chopped spinach. Stir. Fry for 2-3 minutes.
- Add dal. Cook and fold the spinach in it gently. Cook until all the spinach is blended in with the dal.
- Remove from heat and add lime juice.
- Serve with flat bread or rice.
